Chocolate Sacher Cake Recipe – The classic recipe

Preparation time : 45 minutes without cooling

Baking time: approx. 50 minutes

Ingredients :


For the dough :

150 g of dark chocolate

6 egg whites

160g soft butter or margarine

160 g sugar

1 pack vanilla sugar

6 egg yolks

100g breadcrumbs


For the filling :

125 g of apricot jam


For the topping :

60 g sugar

7 tablespoon water

200 g of dark chocolate

For the garnish :

50 g of dark chocolate



For the dough, on low heat in a small pot, melt chocolate on steam and set aside to cool .Mix the egg whites until you get firm snow-like mixture.

Mixer with blades at maximum speed in efort to well  knead the butter or margarine . Add a little sugar and vanilla sugar . stir so long as they get a mixture. Stir in egg yolks one at a time .

On medium speed mix the melted chocolate and bread crumbs.

Carefully stir in egg whites.

Pour the mixture into cake mold ( Ø 26 cm , previously graced it with oiled or use greasy paper )

Electric oven : approx . 180°C /356 F ( heated )

Oven hot air : approx . 160 ° C / 320 F ( preheated)

Oven Gas : level 2-3 ( unheated )

Baking time : approx. . 50 minutes .

Separate dough from the mold, and leave to cool for a 5 min. Then carefully take out the greaseproof paper on which dough is baked make one horizontal cut (make 2 paces). Put apricot jam on the lower portion of dough and place the top portion of dough on it.

For the gauze on the top, in a pot boil some water with sugar for so long until the sugar melts.

Remove the pot from the heat. Break the chocolate into pieces, stir while adding the chocolate piece by piece, stir constantly until it is melted and the mixture begins to glow.

Pour the melted chocolate on the middle of the cake and spread it evenly with knife on the entire surface. Let the topping hardens.

For decoration, you should mark the chocolate cake with hot cake knife just go get 12 pieces from it.

Put the chocolate topping fill in a paper bag or pouch and write on every piece of cake ” Sacher ”

Put the cake in the frees it is done, serve and keep it cool .
